Celiacs who understand the disease know that we are not ALLERGIC to gluten.
We have an auto-immune disorder; a SENSTIVITY to gluten.  When we are
speaking to the uninformed or wish to over-simplify, as in the case of
ordering food in a restaurant, we may SAY we are allergic, but to compare our
condition to other "allergies" compares apples to oranges.
