I forgot to mention in my post - for those of you who may be experiencing
something similar - that my symptoms ran the gamut basically.  Muscle
soreness, joint pain, headaches (this I notice from the oil of the
clippers when I cut my own hair, among other things), reduced mental
ability - mostly in response to something I had eaten come in contact with
(fresh vegetables often caused problems - including often abdominal pain).

And the minerals I've used with most success are:

chromium (bottles labeled "G.T.F." or "Glucose tolerance factor"
magnesium and/or zinc (the supplements I bought, they come in the same
        pill, I don't know which is working more if both)

Molybdenum, manganese, and iron are all things I am taking but yet don't
know if there are positive effects, but I don't think any negative
effects.  Copper I tried but it seems I don't need - it made me very sick
after (and considering the water supply of this city - I believe an old
copper mine - it doesn't surprise me).

If you do try something, and urinate frequently after (and have not
consumed or come into contact with anything else that might cause you to
expel rapidly), you likely don't need it.

Obvsiously, celiac itself would not likely be ameliorated by this
approach, but those of you that suffer from intolerances/allergies
(~likely without an immune component) might be helped by this.
