Please accept my apologies for the mistake to my post on gluten test
kits. It should have read:

The R5 Elisa test kit detection limit is 3 ppm gluten ( 1.5 ppm
gliadin). These results were validated by the Prolamin Working Group in
a number of centers around the world and Codex has given tenetative
approval of the test. A reference about the R5 test is:

Innovative approach to low-level gluten determination in foods using a
novel sandwich enzyme-linked immunosorbent assay protocol
Valdes, I, Garcia, E, et al.
Eur J Gastroenterol Hepatol 2003; 15: 465-474

Companies and groups are using different kits to detect at various
gluten levels. Health Canada is using a 20 ppm test kit but is looking
into using the R5. The Gluten-Free Certification Organization (GFCO) by
the Gluten Intolerance Group is using a 10 ppm kit. See www.gfco.org
