The fact that some celiacs don't have reactions to actually eating
bread and such--excluding "dormant" periods of the disease--just seems
to strengthen the argument that there are varying levels of sensitivity.
Naturally those people aren't going to respond to vanilla extract. It
doesn't follow that no one will.

As someone commented, most celiacs have been through periods of really
terrible illness.  We also have the future to worry about. I would
much rather be safe than sorry, particularly when my experience
correlates with what I'm told. This is not a case where "assumed safe"
makes sense...we need *proved* safe. And from everything I've read,
vanilla and other grains extracts are not even assumed
safe...everything I've read says to avoid them.
