Dear Listmates,

Inspiration hit.  We found the mother recipe in the King Arthur's catalog
and freely adapted it for your dining pleasure.  This recipe is egg free and
can be dairy free if you grease the pan with olive oil instead of
margarine.  The cheese topping is totally optional.  The most unusual
ingredient is gluten-free beer.  Even if you don't drink beer, which my
Everlovin'  doesn't, this is a good dough that even she endorses.  It gives
the dough a wonderful earthy flavor that is not discernible as beer.
Everlovin' tastes the pizza in her mind made with darker cheeses like smoked
gouda, haloumi (frying cheese at Trader Joe's, or haloumi at a Persian
grocer.) or cave-aged gruyere.

If the dough is put into a 9x13 pan, the result is focaccia which has
unlimited possibilities.
