My family periodically enjoys the light taco salad at Taco Bell.  Since they
are also corn sensitive they skip the chips.  They haven't had any noticeable
reactions.  I haven't done any checking on ingredients with the company, so
this is just our experience.  Of course, there could be small amounts of
gluten that didn't cause a noticeable reaction.  But sometimes my husband and
kids decide that it's worth the risk.  Hope this helps.
