While browsing at Border's, I found

Joan Nathan's ==THE JEWISH HHOLIKDAY KITCHEN.

I had forgotten that Passover cakes are often made with POTATO STEARCH!!

No figuring out those recipes.  Also, others are made with matzoh meal,
for which I am pretty sure, we can sub. gf cookie or bread crumbs.
