I still haven't summarized my findings from all the reports I received regarding the conversion of regular Christmas cookies to those that are GF because I got so many DIFFERING reports. One big differing point was whether of not to simply follow the recipe, ingredient for ingredient of course substituting a GF baking mix for the regular and then adding the xanthun gum (and again the amount varied here from about 1/3 to a full tsp per cup of flour). Another outstanding problem is whether to omit the baking soda from the recipe if the GF flour already has baking soda. Perhaps this would account for my lousy tollhouse cookies.

I'm going to give you the recipe for my crappy cookie recipe in case you have some pesty relative coming for a visit...:)
 Tollhouse
    1 C br sugar
    1 C butter
    2 eggs
    1 tsp baking soda 
    1 TBSP hot water
    1 tsp vanilla
    1/2 tsp salt
    2 1/2 C flour
`1 large package of choc chips
and then I added 1 1/2 tsp xanthun gum. I also used Arrowood all purpose flour

The cookies were all crumbly....perhaps there is too much baking soda...perhaps too much gum....perhaps crappy flour mix (Arrowroot)

Before I try to do butter cutouts, I thought I'd get some feedback.

Any light to shed, I would appreciate.
