About 3 years ago, this company sold their bread as gluten free.  No spelt was in it that I know of, but the cross contamination issues popped up.  I had eaten that bread for about a year without problems...or so I thought.   My endocrinologist felt I was malabsorbing as he needed to increase my synthroid.  And he was right.   My blood work showed very high numbers!   Since then, they had stopped selling it as gluten free.   Wonder what they are doing now!

DeLand Bakery has had trouble in the past with gluten in their bread.
Even though the ingredients do not indicate that they use gluten, they
still have gluten in the bread.  If you look through the St. John's
list archives, you will see the hullabaloo that was caused by this.
In fact, I used to buy the bread by the case, until I found out about
the gluten issues.

I've since talked with a couple of bakery owners about gluten and
bakeries.  Due to the flour flying around and getting into the air
vents, most bakeries will not attempt gluten free baking.  Even if
they were to close the vents, etc. and only bake gluten-free products
on one day a week (as Deland used to do), the gluten particles can get
around any attempts at cleaning up the air and the vents.

For our family, it was not worth purchasing the bread any longer, as
we were not willing to take any risks with the cross contamination
issues of this particular bakery.  It's too bad, too, because they
made the best bread I've ever had.
