Well what I was originally planning to summarize has changed..... I have
received many responses, and I have followed them up before summarizing.

This is what I have found....

Dining by Design has agreed to work with my sons school to make and send
frozen meals that can be heated at school by the kitchen staff.  Karmyn is
the contact and she is talking with the school.

Dietary Specialties was also another company that was suggested.  This is a
copy of what was sent to me in response to my letter to them:

"This is Ronni Alicea, the dietitian with Dietary Specialties.  We have
Frozen items available for your school system.  If you have them call, I
would be happy to discuss how to manage preparing our Mac & Cheese, lasagna
and ravioli so not cross contaminate- e.g. pizza on bakers paper, using
clean utensils and cutting boards etc.

We have rolls that are frozen also.  You may help your school lunch ladies
by finding out if their hotdogs and hamburgers, peanut butter etc. are GF by
checking with manufactures.  This way your son will eat like everyone else,
just a little different.

Take care-  our number is 888-640-2800- Our Customer service team can set up
an account and get them started."
