It also provides food for hospitals.."At your request" in room dining.  Food
of your choice delivered within 45 minutes of placing your order....I found
the Marroitt website on the menu at a local hospital in Milwaukee...I sent
the letter below off to them today...My friend's doctor is the chief of staff
& is willing work with me to help insure that accommodations are made for
celiacs in the future, but I haven't felt the spirit to do that battle yet.
The menu at the specific hospital notes that kosher & Hmong menus are
available.

I didn't realize they also did college food.  Very scary!  I would think the
university would have some leverage with Marriott if they said they were
trying to comply with the American Disabilities Act....If a person in a wheel
chair had to bring their own food & eat in their room because there was no
elevator, there would be hell to pay!
I will let you know what I hear from them.

My youngest son attended a Big 10 university lived in a dorm for two years
where the big food service system wasn't the most accessible. Unfortunately,
as a guy, he did little to investigate what his options were, something that
was his--not my--job.  As a celiac myself, I've found that ultimately each
has to be responsible for his/her own diet. I don't live in any else's body
but my own!)  After 15 years on the diet, it was his time.  He ended up
anemia and elevated liver enzymes, from traces of gluten no doubt, which
resolved when he moved to an apartment & began cooking for himself.  His
brother attended a smaller state school with an old fashioned food service.
He got lots of cooperation once he took the initative to find out what was in
the food & fared much better.

Support groups might want to check out the food service options at area
hospitals or arrange a plan to provide g.f. food when members are
hospitalized.
