Hi List:

Re those Lemon Curd Bars:

I have already had lots of inquiries about lemon curd.

I find it in my supermarket, made by Tiptree (an English brand).  You
can also make it yourself.

In a double boiler top:

1/4 pound butter
1 1/2 cups sugar
Grated rind of 2 lemons
Juice of 3 lemons
6 eggs, slightly beaten.

Stir well.  Cook over hot water until thick, stirring occasionally.
Store in a covered jar in the fridge.

I have never made it myself so I don't know how it keeps, or how long it
keeps.

Stevia is an up and coming herbal sweetener, very potent, very
expensive.  I get it at my health food store, and it can be ordered in
bulk from several of the suppliers who stock other goodies for the gf
eater and cook.  (Like Azure Farm in Oregon, though their alternative
grains are definitely not free of contamination--nor do they claim they
are!)

Please do not request other recipes from me:  I am not a source and I am
too busy to answer a lot of replies, sorry.  Besides, many recipes can
be found in the archives.
