Spelt flour is advertised as -

-Spelt Flour has less glutamic acid/glutamine than normal wheat

-Less of the proteins (omega Gliadins) whose break down cause coelic
disease.

Celiacs were either
a) immediately sick with it
b) eventually sick on it.
mainly because it contains gluten!!

People with Wheat Allergies (not many replied)
no-one who has a wheat allergy and eats Spelt replied, apart from one
person who had a bad reaction to it - although she wonders if she is a
celiac also.

I am trying it at the moment because it seems that I have the allergy as
opposed to Celiacs, but haven't been eating  it long enough to tell.
