I'm sorry it's taken me so long to respond and thank everyone for their replies regarding wild game and celiac disease.
   
  Everyone agreed the meat was fine and that the preparation was the only real concern.  
   
  My husband also has a kidney disease where he can't eat purines and I think I was concerned the two may have some similarity.  He was diagnosed about 6 months ago and I have been a bit nervous about cooking for him!
