There was an interesting comment on the Easdes low carb cooking show about trans fats.  They specifically mentioned that CANOLA and SOY OILS were NOT good choices.  In the processing, the fat turns to a trans fat.  They recommend using butter or olive oil.

It's interesting that when I was first diagnosed 15 years ago,canola was a big no-no.  The Canadian Sprue assoc said that the rapeseed [canola] was grown on fallow wheat fields and was contaminated from the seed up.  Then that fell out of fashion, and now I hear that's back.  Anyway, it's bad for you...don't use it.
