The NFCA uses the proposed FDA definition as its working definition of
gluten-free.  Get your product registered as gluten-free. GREAT Foodservice,
a program of the National Foundation for Celiac Awareness (NFCA)  has chosen
a specific symbol to brand association participants as gluten-free, the
"universal gluten-free symbol".  A grain representing wheat with a cross-out
mark is widely used around the world as an international representation of a
gluten-free symbol.  It is inclusive of many different cultural groups.  It
speaks to the need of labels on packaging to communicate dietary safety to
non-native English speakers, pre-literate children trying to manage their
diet, and to those who are non-literate.  Further, variations on the crossed
out wheat symbol allows others, such as: hosts or caretakers or those
teaching the diet, such as dietitians, parents, and doctors; to readily
identify gluten-free products according to a general picture. 

 

What are the requirements for GREAT Registration to keep those with celiac
disease safe?

 

Submission of application and payment $100 per product

List of ingredients and copy of label

Letter of gluten-free verification from each supplier

HACCP or Gluten (Allergen) Control Plan

Audited Third Party Test Results and ongoing batch testing

Health or USDA certificate

Copy of liability insurance

Submission of contract

 

Our product is already recognized by another organization.  Why should we do
this again?

To gain use of this symbol, join our business association and most other
programs will easily transfer over, you will just need to renew annually.

 

Why the word GREAT?

Gluten-free should not taste nor feel like dirty socks.  Gluten-free can be
GREAT!  GREAT coincidentally is an acronym for Gluten-free Resource
Education and Awareness Training.
