I saw the recipe in the list files for Indian roti, something similarr if
not the same. That recipe talked about pressing on the breads with a paper
towel to help them puff - I have done this also with a larrge "plastic"
pancake turner and it does help. You press on them while they arre on the
heat. You could look up the recipe in the files (from 1995, I believe) and
check it out. I learned this frrrom several Indian cookbooks.
 
I got excited rreading your recipe and have to try it right away! I would
think you could skip the extensive kneading and resting...
