I am responding because a ms. veasey posted about finding good gf cruises.
My mail bounced back to me.
We got back from a  Celebrity Cruise two weeks ago. We had a great time! I am on the gf diet.
I notified the cruise line in advance about my issue. Celebrity had no problem working with me.
The first evening in the dining room was a bit vague, but afterwards I found the maitre 'd.  Every night after I finished dinner the maitre 'd would come over to me with the following day's menu. I would tell him what I wanted and almost all dishes could be converted to gf if they weren't gf already.
The only place which may be a bit difficult is the lunch buffet upstairs. The food selection changes daily up there and I wouldnt even know who to ask about which is gf. I only ate things that I definitely knew were gf.  In the dining room, however, you really cannot go wrong. The dining room was pretty much open every day for lunch as well.
