Hi everybody,
here comes my summary abt Australia and living on a GF diet there.
Well things are pretty nice in the big cities such as Adelaide, Melbourne and Sydney. All supermarkets (even the small ones) have quite a good selection of GF bread, cookies, crackers and flours. The aussie associations were very helpful and they sent me a list of celiac-friendly restaurants and cafes.
The best thing l found there was the bread, symply delicious!:-) l still miss it now that lm back home:(
I went to the Northern Territory of Australia which is supposed to be the wildest and most isolated part of the country but still some shops there (ayers rock resort for example) have frozen gluten free bread, rice cakes and crackers. 
On top Aussie people are just very friendly and helpful and Australia is a wonderful country. Hope I can go back soon.
