Outback has an interesting & yummy new GF menu item you oughtta try if you
get a chance. It's called bronzed chicken breast & grilled corn cakes.
Nothing unsual about the chicken breast or the delicious shrimp, but the
corn cake was really something else. When I ordered it, I imagined that it
would be something like a cornmeal pancake or such. But it was way more
special than that. It was so much better than the chicken & shrimp as well
as very filling, I gobbled it up & took the meat home in a doggie bag.

The outside was crispy & browned, the inside soft & warm. It didn't contain
eggs or baking powder & wasn't fluffy or leavened at all. It was more like
a fried polenta cake but somehow they incorporated grilled onions & peppers
into it. I don't know how they did it. I searched the web for corn cake
recipes but none of them seemed like they would turn out like this special
item. If anyone knows how to make a corn cake similar to this, please pass
along the recipe.
