Just got back from a Norwegian cruise on the Wind out of Hawaii.  They had gluten free bread on board.  No problem eating gluten free.  They checked my selections every night and altered my menu if need be.  The executive Chef says the whole  cruise line is now  catering to special diets.  They toast your bread and take wonderful  care of your dietary needs.  Unfortunately American Airlines has nothing for you to eat or buy.    Bring plenty of peanut butter and crackers to dine on.  The terminal only has a chiles and don't have the  steamed vegetables  to buy food from.  Too bad they don't have  a fruit plate of salad to buy. It's a long flight.
