For what it's worth...We were told once that the celiac's problem
with chicken is related to the fact that many celiacs are also very
sensitive to soy, and chickens are fed a high soy product diet these
days.  Don't know if this is true, because my husband is highly soy
sensitive and yet has no apparent trouble with chicken.
