I have no idea if McDonald's changes the oil, but I recall that they
changed the ingredients of their Hash Browns.  I believe they are gluten
free.  In any case you can make your own judgement based on the ingredient
listing.  I retrieved it for you from their web site.

Hash Browns: Potatoes, partially hydrogenated soybean oil, natural flavor,
salt, corn flour, dextrose, sodium acid pyrophosphate added to maintain
natural color, and spice. Cooked in partially hydrogenated soybean and corn
oils, TBHQ (to protect flavor), citric acid, dimethylpolysiloxane and
natural flavor.
