I consider myself a pretty creative person, but WOW I was blown away by 
the amount and quality of responses from you all! Thank-you! :-)

I'm pretty busy this week, but will try to summarize soon. Briefly (and 
in case I can't get to a summary later), many of the suggestions were 
for macaroni and cheese, Mexican foods of various kinds (tacos, 
quesadillas, burritos, nachos, etc.), hot dogs/burgers without the buns 
or with gf buns, sandwiches, and finger foods, such as fruit and veggie 
kabobs or cheese and meats. I also received specific pizza crust 
recommendations, recipes, and general party ideas. A couple of my 
favorite party ideas were using frisbees as plates (too bad I already 
bought the Mickey Mouse plates!) and having an apple-tasting (similar to 
wine-tasting).

Thanks for helping me to brainstorm! I think I will find a good crust 
recipe or mix out of your suggestions and go with a pizza. I thought of 
a pretty good idea. I am going to shape the dough into a Mickey Mouse. 
:-)  I think I will also serve chips and a fruit salad or fruit kabobs 
(I liked that idea). Cupcakes were also suggested and I think if I could 
find or make small gluten-free chocolate cookies, I could put "ears" on 
top of them. That might be pretty cute. I will try to let you all know 
what I finally come up with and include a more detailed summary.
