Ann mentioned lots of bakers said Sweet Rice Flour is a good substitute
for better texture in GF baking. I have a box of SWF from Ener-g foods
(that is the only ingredient)-- the problem <in my opinion>, is this:
ONE CUP SWEET RICE FLOUR= 405 CALORIES
TOTAL CARB (FOR ONE CUP)=90 GRAMS OF CARBS!
Irregardless of if you are diabetic or not, that kind of calorie & carb
load is sure to make you gain weight and raise your blood sugar.
Although one cup only has 9 calories from fat, your body turns all carbs
into sugar.
Obviously when you are baking from scratch, you'll be adding more
calories in the form of oil, eggs, milk, sweetener...etc...
No wonder people gain weight on the GF diet!
