To Juli of NC and others who asked about the casserole.
Fresh tomatoes in the spanish rice casserole are wonderful if they are available.  However, canned are fine.  i usuallys can my own, but a good brand from the store is ok.  About basmati rice, it is often available in super markets, and almost always in the health food store.  Am glad to hear that it works well in a slow cooker.  Slow cooking of meat is much better for us anyway. Happy eating!
