Hi,

Sorryb for the delay but things have been hectic on my end with 2 young
ones plus out of town guests trickling in for the holidays...but here
goes:


GF VANILLA EXTRACTS -

1) Many said McCormick's was GF and this had been recently confirmed
some listmembers calling the company.

2) Kroger recently said their extracts are GF but they won't send out a
list.

3) Pure Vanilla Extract - Nielsen-Massey Vanillas Inc.  Waukegan, IL
60085-8037.  This was found at a Williams-Sonoma as well as a local
kitchen specialty shop.  The alcohol is from corn and an 8oz bottle cost
$11 one year ago but it lasts a long time.

4) Durkee Imitation Vanilla is GF

5) Ener-G has a wonderful vanilla powder that's GF.  it's #4657 on the
order blank.  Their phone nbr is 1 800 331-5222.  It costs $8.32 but
lasts a long time.

6) Cook's Vanilla is GF.   A listmember called 1 800-735-0545 6 weeks
ago and got phone and written documentation.  The company also has a
couple other unusual extracts/flavorings that are GF.

7) Frontier - a glycerin based vanilla extract marked GF on the bottle.
Very hard to find due to low demand and short shelf life.

8) Trader Joe's Cookbook Vanilla is GF


RECIPES TO MAKE YOUR OWN GF VANILLA EXTRACT:

1) Vanilla beans broken in half submerged in sugar tightly sealed and
left in a warm place for a couple weeks.  This makes wonderful vanilla
sugar which can be used in recipes or coffee/tea.  Use one bean per 2
lbs sugar.

2) To make own extract, heat on low 1/2 cup GF brandy with one vanilla
bean browken into 2-3 pieces for 5 minutes.  Let set aside until cool.
Pour into jar, cover and leave in fridge for 2 weeks.  USE LOW HEAT OR
BRANDY WILL SET ON FIRE!!!  This will keep for a couple months in the
fridge.

3) Use 1 bottle GF vodka (size is 1/5).  Put 2 vanilla beans into the
bottle, close the cap and let sit for one month to develop flavor.  Use
measure for measure as store bought vanilla.  Could also split beans for
quicker flavor.


GF FROSTINGS

1)Duncan Hine's Homestyle Frosting is GF

2) Pillsbury Creamy Supreme Frosting  is thought to be GF, not confirmed
since 1996.

3) Make own GF butter cream frosting found in cookbooks or on the back
of C&H powdered sugar packaging.


PLEASE REMEMBER TO CONFIRM THAT A PRODUCT IS GF BEFORE USING IT!
