Hi

I just made Pilgrim South's bread recipe.  It actually worked out better
than most homemade breads with one problem.  After taking it out of the
oven, the center sinks down about 1/2 - 1".  I am using a medium bread
pan (I used to use the large loaf pans but always had the center drop
down to about a 1/2" height - and heavy like a pound cake).

Any idea what I am doing wrong?
