Canada is VERY Gluten-Free friendly.  I live across the border and I even shop at some of the stores in the Niagara region.  I am certain you will find nearly anything you are looking for, and if you dine out - Just let them know.  A lot depends on the type of dining you will be doing too.  They have a wide variety of ethnic foods including: Thai, Middle-Eastern and many others.

Hi,  There is an Outback Restaurant across from the casino.
hi, we have had good luck at most restaurants in the area. The one we go to often is the Buffet at the new Casino. The chef will walk you through and go over each dish with you. If you have children they cannot go into that restaurant. 
Napoli's on the Lundy's Lane has gf pizza amongst other good things. 
Swiss Chalet is great but don't ask for fries. 
Have a great time. Oh if you have a car and can get to St Catharines, try our favorite place, Cafe Amore on Martindale Rd. They have gf main dishes, sauces, buns, and desserts.
