I hope this is not a stupid question.  I have read the archives about wheat starch, but I am still wondering how many people out there eat it and how many have trouble with it.  I have been avoiding it, but it seems that in some cases it is okay.  How is wheat starch different than "modified food starch-wheat"?  I would be grateful for any input and will summarize.
