Anyone else frustrated with the mystery of grains like AMARANTH, QUINOA
and WILD RICE? Is it that difficult for a molecular biologist to determine
if these grains contain gluten molecules? I have requested info from the
World Health  Organization, and National Institute of Health regarding
scientific confirmation/final word on the molecular breakdown to stop the
mystery.
 
I have not yet received a reply. I would like to encourage other folks on
this list to contact their nearest University Science center, or
Extension Service to get scientific research on these grains. I don't want
to play roulette with Celiac and it seems the technical data should be
available.
 
Please post what you find out (and list your source).
