On occasion the topic of safe gluten-free oats comes up on the list. Recently, Bob's Red Mill sent out a newsletter to customers about their new gf oats product. I've never personally tried oats before (nor this product) as I believed I couldn't have them, but this may be an alternative for some people who don't have the sensitivity to oats themselves but feared contamination of wheat in processing. I have no interest or affiliation with Bob's Red Mill, but here is the information posted in the newsletter, should that be helpful to some of you.

Gluten Free Oats: Real Oat Goodness

For those with celiac disease or gluten intolerance, oats are a challenge. While oats do not contain gluten, they often share some part of their life with gluten containing grains-from the fields where they grow to the mills that process them. Oats are extremely nutritious and nothing beats a bowl of hot oatmeal for breakfast.
At Bob's Red Mill we take our gluten free products seriously. We always bring you the highest quality grains available. It has taken us over two years to find the purest oats available. We have spoken to farmers and visited their farms. We have conducted innumerable gluten tests on sample after sample. Contrary to what mother told you, not all oats are created equal. After finding clean oat groats, the next step making the groats into the delicious oats you expect. We have baked and tested, tasted and cooked until we have found perfection. Gluten Free Rolled Oats

Roasting enhances that wholesome, robust flavor you expect. The oats are packaged in our new, 100% gluten free facility and tested for gluten again to ensure their purity.
*Please be advised that a small percentage of people with celiac disease may not tolerate even the purest of oats. If you are unsure whether oats are suitable for your diet, please check first with your health advisor before eating them.

Gluten Free Oatmeal Cookies 
1 ½ cups GF All Purpose Baking Flour <https://www.bobsredmill.com/catalog/index.php?action=showdetails&product_ID=199>  
3 cups Gluten Free Rolled Oats <https://www.bobsredmill.com/catalog/index.php?action=showdetails&product_ID=680> 
1 cup Butter (softened) 
1 cup Brown Sugar
½ cup Granulated Sugar 
1 tsp GF Vanilla
1 tsp Baking Soda 
½ tsp Sea Salt
1 tsp Cinnamon 
2 large Eggs*

1 cup Raisins (optional)
Preheat oven to 350°F. Beat butter and sugars together until smooth. Add vanilla and eggs; beat well. In a separate bowl, blend flour, cinnamon, baking soda, salt and Xanthan Gum. Stir flour blend into wet ingredients. Add oats and raisins and mix well. Drop rounded tablespoons of dough onto un-greased cookie sheet. Bake for 10 - 12 minutes, or until golden brown. Cool one minutes then transfer to wire rack. Makes about 4 dozen cookies.
Eggless Option: Mix together 2 Tb. Flaxseed Meal with 6 Tb. of water and let sit for a minute. Add to recipe as you would the eggs.
