Hi all!

Last you all heard from me, I was a starving, scared college sophomore recently diagnosed with the disease. I received dozens of encouraging words from you all about how to cope with my school situation. I wanted to update and have a whole new set of problems!!

I am now a junior, living in an apartment on campus with two very understanding roomates! I have been strict to my diet, and my health has been good so far. Here is where the problem lies... I try to avoid the cafeteria, I find myself sick after EVERY meal there. I stick to basic, inexpensive meals to cook on my own. The trouble is, I am a nanny in between classes, cheerleading, trying to apply to Grad school, etc... I am low on money and time to prepare meals. Gluten free cooking is NOT cheap--especially for a college student on her own. I need suggestions for QUICK, INEXPENSIVE meals for one. I generally have about 30 minutes-and hour to prepare meals before cheerleading practices.

I also am competing in the upcoming Miss Georgia pageant. (I competed last summer at Miss TN, and had a blast representing the Celiac Community!) My platform is Celiac Disease Awareness, and I am looking for ways to help spread the message and become involved. I am trying to order the children's book to read to school children, but need other ideas. Please help!
