Hi,
 
In Betty Hagmans books, there are a couple of recipes requiring
ricotta. I live in Lubbock, Texas and  when I went to my local
grocery store, all the ricotta listed vinegar as an ingredient.
Also, I really like cottage cheese, yet all the brands listed as
being gluten free in the various lists I have are unavailable where I
live. The brands at my local grocery stores (Bell dairys, Sur Fine,
Dannon, ) all seem to have dubious ingredients such as modified food
starch and mono and di glycerides. Does anyone know of brands of
gluten-free ricotta and cottage cheese that are widely available, or
available in my area?
