I only got two responses:

I've only been there once, but I do not recall Knotts being very GF
friendly. I am a pretty liberal GF eater too (I know which is bad)...
they are big on "Down Home Cooking" which is Fried Chicken, biscuits,
gravy etc. They have a website that lists the different restaurants they
have. www.knotts.com. They have a grill listed which does grilled
chicken, but I did not ask when I went there if it was a dedicated grill
line and if they toast buns on it. They have a Mexican food area as well
that should be more accomodating to GF menu, but again, no guarantees.
The one thing about Knotts, however, is that it is in downtown Buena Park
(Orange County) so there are plenty of places around it to check out.
Within 20 miles of Knotts there are a number of Whole Foods health food
stores (which usually carry a variety of GF products). Less than 10 miles
in the area are a number of Trader Joe's (grocery chain) that produces a
list of their own GF products and have a wide variety. Hope any of this
helps you.

It's been too long since I've been to Knott's to know what's there. But
there is a Claim Jumper across the street that I know you can get GF food
at. I usually stick to chicken or steak made without any seasonings,
mashed potatoes no gravy, salad bar, and instead of bread you can order
corn tortillas. The dessert items on their display tray aren't the only
ones they offer too. When I go for dessert I order a banana shake (not on
the menu) make sure it doesn't come with a cookie! Hope this helps.

I also searched the archives for Knott's Berry Farm, but all I found was
a bunch of questions and a post from 1998 that says the preserves are not
guaranteed GF and the salad dressing definitely isn't gf.
