Given the above, I have been searching for a soy sauce that I like,
and that is also gluten free.  I had a very bad reaction after eating
at our local PF Chang's (ordering from their GF menu), where they use
San-J soy sauce.  I have no idea if this was what was behind my
reaction, because I have used it at home (though only in small
amounts), without incident.  But, if cross-contamination is an issue
with San-J, I guess that would suggest to me, per Helen's note, that
it is possibly not always safe. (I am not particularly fond of La
Choy, which many have noted is GF.)

I did find a sauce, and it is Tree of Life Organic Wheat-Free Tamari.
I wrote to the company, and explained that "wheat-free" and
"gluten-free" are not always the same, and this was the answer that I
received.  Assuming this is correct information, I'm a pretty happy
camper now.  If anyone knows anything different about this product, I
will pass the information back to the group.
