Hello, I have always been confused about my "being glutened" symptoms and reactions and am wondering if anyone has similar stories. I believe my first reaction to being glutened is extreme exhaustion, like I have bern drugged. This lasts for about 24 hours. But my digestive system doesn't cause problems until a week or so later and can last for several weeks. . To clear up these messes, I must be totally dairy free, or my digestive system will not recover. 

I read that so many people have almost instantaneous reactions, which I don't have. Because I don'y have these reactions, it is difficult for me to pinpoint how I got glutened. Anyone else have these symptoms?

I am a biopsy diagnosed celiac and have been gluten free for a decade.

(btw, in the years I have been GF, I believe I have tried every GF cake mix on the market. I recently stumbled across King Arthur's cake mix and muffin mixes, and they are, by far, the best. )
