Thanks to the person who asked about breakfast, my favorite meal. Since
I have only just been diagnosed as a Celiac I have not developed a large
selection of foods. I have taken the quick and easy approach. I
developed a full days list of GF food and I basically eat the same thing
each day. My most difficult problem is I work long hours and I am at
work before 7AM. No time for breakfast! I started out eating just
fruit but was starving by 9AM. I tried making Betty Hagmans' English
Tea Scones (page 80 of More From The Gluten-Free Gourmet) and found the
answer. They turned out more like large thick cookies but they are
good. They freeze well and are portable. I cut them in half and fill
with jam.

Bettys' book has a recipe for devonshire and french cream for a topping
but I have not tried it yet. I also have a recipe for Quiche with a
mozzarella cheese crust if your interested let me know and I will post
it.

Enjoy! Cathie from Canada
