I recently attended a support group meeting in Dallas where a restaurant was
recommended as being willing to provide gluten free meals.  Since the
restaurant is only a few blocks from our home I stopped in there this morning to talk
with the chef about the menu.  I was told that they recently had a celiac come
in to have a gluten free meal.  She was so defensive and belligerent (to the
point where she demanded a specific brand of olive oil) that they are
reluctant to provide gf meals.   It was so disappointing to hear this story - we
should all remember that we catch more flies with honey than with vinegar.
