Here are the responses I received about which setting to use on the  
Zojirushi BBCC x20 :
 
(1) "gf" setting does not work well...uses the following: Preheat 5 mins.,  
Knead 18 mins, Rise 1 1hr, 15 min., Rise 2 and 3- off, Bake 1 hr., 10 min., 
Keep  Warm - off.
(2) follows the setting for "homemade" bread so she can put "0" values in  
1st 2 rises.  Has never tried quick setting.
(3) uses quick setting because our bread doesn't need 2 kneadings and  
because it takes just under 2 hrs. to bake a loaf. Good references for this  machine 
are GF Pantry and Zojirushi's website.
(4)doesn't use quick bread setting because a punch down and 2nd rise aren't  
good for gf bread.  Uses own cycle: Warm- 15 min, Mix- 18 min, Rise- 43  min, 
Bake- 55 min, Crust- medium. Uses regular yeast.
(5) make's Pamela's bread mix on quick setting but replaces yeast packet  
with quick-rising yeast. If she uses the regular yeast packet then she uses  the 
basic setting with medium crust.
(6)uses Breads from Anna mix (formerly Manna from Anna) and uses the 2:08  
setting, which is the "quick wheat" setting, as recommended by Anna.
 
Since I also like the Breads from Anna mix I will probably start with #6  
first because it looks quick and easy, which appeals to me!  Thanks so much  to 
everyone who took time to answer my question.
