That would be great.  Unfortunately most priests that I've encountered won't
allow it.  In the council of Trent in the 1500's it was declared that the
host must be made of Durham wheat flour.  At the time the church was having
problems with people using almost anything as host.  Today the church is
still enforcing it.  So at my church, my wife (she also has Celiac) and
myself have no choice but to receive the (possibly contaminated) wine.
