I believe since 1994, that decree may have changed.

But, at the time in 1994, there was not the low-gluten host that was
acceptable in the Catholic Church. The tradition in the Catholic Church is
that the host must be made of unleavened WHEAT bread. By the rite of the
Catholic Mass, the priest must partake of the bread and wine as Christ did.
A Celiac priest, obviously would not be able to if the wheat bread would
make him sick. So, it was so decreed in 1994.

Today, there is a low-gluten host that fits both the tradition of the church
by containing a barely perceptible amount of gluten, made by Benedictine
sisters. The gluten amount in this host is so low, it passes the ELISA test;
it does NOT make a blip on the "gluten radar screen". The current pope,
Benedict the 16th, was Cardinal at the time this host was declared
acceptable (he was Defender of the Faith under Pope John Paul the 2nd) for
Communion.

Of course, the Precious Blood (the wine) is acceptable by itself for most;
but as a priest must take both during that part of the Mass, that is why the
decree was issued. It would take a writing to the Vatican, referencing the
low-host, to see if this has been truly updated.

Ironically enough, given the time Christ lived and the region of the world
He lived in, the bread at the Last Supper most likely would have been made
from barley.

There have been many misunderstandings about this whole issue, but
eventually it will be cleared up. Even the Catholic Church can change--it
just sometimes takes a real long time.
