Thank you everyone for your advice on exhibiting info on gluten sensitivity.  I hope this summary helps others who are planning upcoming exhibits...

  a.. The Northland Caliac support group exhibited at the Minnesota State Fair and used "gluten free food on a stick" guides to eating at the Fair which was the "grab"
  b.. Copies of  recipes
  c.. Display of  gluten free products
  d.. Don't focus on food and leave people w/the impression that having celiac means having to eat expensive special food.  Do focus on the positive health improvements.  
  e.. Do focus on gluten sensitivity rather than CD because of the amount of people who test neg for CD but still have problems that could very well be related to gluten.  Use the gluten sensitivity brochure printed by GIG.
  f.. Don't focus on the villi damage b/c it could easily be another system of the body affected by gluten (liver, reproductive system...)
  g.. Present the food pyramid and how easily the GF diet fits
  h.. Continuous play of the DVD by Dr. Thomas O'Bryan
  i.. Tri-fold board w/ (1) newspaper/magazine clippings (2) celiac publications (mags, newsletters, survival guides (3) sources of GF foods (on-line stores, manufacturers, etc)
  j.. Copies of GF menus
  k.. Membership forms nat'l organizations
  l.. Business cards for local support group contact info 
  m.. Display books such as Danna Korn's (make sure they don't walk off!)
  n.. Shelf displaying basic flours and a variety of GF food -- big attraction that lots of people stopped to look at
  o.. Samples of cookies, crackers and pretzels in baskets or paper cups
  p.. Dieticians toolkits
  q.. Prepared speech
  r.. Posters w/facts
  s.. Literature from CSA -- provided free to local chapters
  t.. Game that has 5 diff foods and people coming to the booth are asked to pick out the GF food.  Ex's are Twizzlers, Doritos, Snickers, VanCamps pork and beans and wheat pasta.  If they guess correct they get a GF treat i.e. Reeses pnut butter cup
  u.. Cover the table in bright color
  v.. Use 4 people at a time to work the booth
  w.. Use large enough lettering on signage that is visible from distance.  Sample signage..."Do you have...Do these symptoms recur frequently or never go away?...Then you could have CD"
