My husband and I will be taking a cruise the end of January aboard Carnival Cruise Lines Paradise Ship on the Friends & Family Christian Cruise. I will obviously be travelling without access to a kitchen and making my own food for the first time since diagnosis three years ago. Although I am excited about the trip, I am quite apprehensive about eating GF while at sea and at ports along the way. I rarely eat out because of the difficulty eating GF and cross-contamination issues that come with dining out, as we all know.

Has anyone had experience with Carnival cruise lines or this particular cruise in the past or have any helpful suggestions? I've looked in the archives and the information was not all that helpful. I have already contacted the cruise line and they assured me they would get my special dietary requirements to the chef but that did not make me feel that much more comfortable. 

I will summarize.
