I wanted to get a summary out tonight because I have gotten a lot of responses and I am sure there are other bakers getting ready for Thanksgiving.  I used Jo-Sef last year but had a very hard time breaking them up.

A lot of people said Midel Ginger snaps or Arrowroot animal crackers
 
Pamela's ginger snaps, lemon or expresso were recommended.
 
We use the Health Valley Rice Bran crackers.

Deliteful in Lawrenceville has Smore Graham Crackers.
 
You can make some quick gingerbread cookies and just
crumble them. Use any gingerbread recipe and substitute
GF flour (since you aren't cutting them out, it doesn't
matter if they are crumbly).
 
I  usually use MI Del gluten free ginger snaps instead of graham cracker crumbs.  they work super.  Just about any gluten free cookie will work as crumbs.  Just whirl them in the food processor & add about 1/4 -1/2 cup melted butter and you have your crumb crust..
