In my recipe for flourless peanut butter cookies, I mentioned "jelly roll pans" and I've gotten some questions about them...namely "what are they?"

Jelly roll pans are cookie sheets with a lip all around.  `They are heavier than reg cookie sheets so they don't warp and they distribute the heat better.  You can also use them, surprise---for jelly rolls.  I got mine in a set of 2 at Cosco for about $13....they are worth every penny
