Here is a great answer regarding how companies test for gluten. If we expect more manufacturers to label their foods by ppm or gluten-free, our organizations will have to get this information out to the food industry and/or the labs should be advertising in food-trade magazines. Perhaps they do.

There are several labs that can do the testing and they can test to 10 ppm.
They use the Elisa test but have machinery that is much more sensitive than
a home test can be.  One lab is at the University of Nebraska and there is
another in New Jersey.  I believe there are 6 or 8 in the US and at least a
couple in Canada.  They are food technology labs.
