I was surprised when I read the posting that said they had bought GF baked
goods from Whole Foods that were defrosted.



These items are supposed to sold frozen. As with other GF baked goods, they
only have a shelf life of 2-3 days after defrosting.



For a tasting at our support group, I defrosted several of the items
overnight and served them at room temperature the next day. This was ok for
the breads, muffins, and pies. But not great, the bread was much better
heated for toast or in snackwich machine. This method of defrosting was
terrible for the scones and biscuits. They were completely dried out.



But the products all were better when kept frozen, defrosted in microwave
wrapped in moist paper towel, then toasted or baked slightly in warm toaster
oven to even out the moisture. With this method the cream biscuits were
great. Of course, I haven't had a biscuit (southern style in 15 years). But
it's close to what I remember.



If you think this is just too much trouble, then there's no reason to spend
$8 on a loaf of bread, or $6 for 5 biscuits.
