I got a call back from my life insurance underwriter.  Their guidelines say
that someone with Celiac is at greater risk for Type II Diabetes and some
cancers.  When I pressed her on why, she asked me to imagine if I went off a
gluten-free diet and how sick I would be.  Apparently that's what the life
insurance company does.  They figure, "Well you're healthy now, but what if
you started eating gluten again?"  She said that no one with Celiac Disease
can get their best rate.
 
If anyone has successfully fought this kind of ruling, I will appreciate
reading about it.
 
Please don't write to commiserate.  That's not why I am posting this to the
list.  Please write me if you have successfully fought this kind of a ruling
by an insurance company.
