Malitol is a sugar alcohol made from various grains. Some believe it is
truly GF."usually made from corn"
Others avoid anything even resembling malt.
It tends to create gastric symptoms in celiac as well as non celiac
individuals. This is due to being digested in the lower bowel, instead
of the small intestine, like other types of sugars.
There was a reference to kefir, that is supposed to help with digestion,
of this, and bean sugars, and the slow to digest: low glycemic sugars.
I intend to investigate kefir further. I may include what I find
in a latter post.
